    Recipes - Vegetable dishes

I have to thank JCC for this idea. She served some sauteed shredded Asian vegetables for lunch one day and I thought they were delicious. I could not find any Asian veggies in a bag at my local store but I did find Broccoli Cole Slaw. To the Broccoli Cole Slaw I add other chopped up vegetables. This morning I added:
    Green cabbage
    Red cabbage
    Bok Choy
    Kale
    Celery
But you can add anything you want - onion, spinach, sprouts, cauliflower, seeds, bacon...whatever sounds good to you.

My seasonings have varied greatly. At times I have used herbs. I guess the strangest seasoning was a combo of salt, pepper, ginger and a little cinnamon. Right now all I am using is salt. I think I have a problem with pepper. I will start another thread about that.

Directions: Heat a pan on medium low with the oil of your choice. I use coconut oil but since I cook this on low I have also used olive oil. I saute this gently. Add all the vegetables except for spinach. Season to taste. Stir often. Add chopped spinach when the veggies are almost done. Cook to your desired doneness - I like mine a bit crunchy but a friend likes his without crunch.

This is a breakfast staple for me. I usually mix it with some cooked grass fed ground beef but it can be served on the side. It reheats well.

My friend likes to buy the broccoli slaw from Sam's as it comes with cranberries, bacon and sunflower seeds. He tosses out the dressing that comes with it.

Hey Al, how did you make your image so large? You can see a larger image if you click on it.
