Infraction for dahlek: , in topic: sad aspect of our spinal surgeries Bob Welch of Fleetwood Mac kills himself

This may sound strange but are eggs completely gluten free? What aobut meats and chicken? Do these things bother anyone? I remember reading something aobut the animals are grain fed so they may be a gluten source but is this jsut a far fetched worry that's been passed around? I know there s a lot of experience here so I fugured this was the place to get a real answer, if there actually is a real answer...

I don't think gluten can be directly inserted into muscles or organs (i.e. "meat"). At least, I've never heard of meat testing positive for gluten unless it has been cross-contaminated.

Are eggs and meat really gluten free? Yes. The safe level has been established to be 20 ppm. I am confident that is the case for eggs and meat based on what happens when I eat them.

I agree with NancyM about the meat. I don't think that gluten could get incorporated into the meat itself. The proteins in the gluten would be broken down into amino acids and then reconstructed to the proteins that occur in the animals.

Could some celiacs react to eggs and meat anyway? I think the answer is yes. I do think that some meat gets cross contaminated. I think that this is especially the case for chicken because of the way that they are processed. Since they eat gluten containing diets, there would be gluten on them and in their feces. I don't think that this bothers any but the very most sensitive however. I eat pasture raised eggs all summer and then when winter comes and my farmer starts feeding the chickens gluten grains, I start reacting to them. Then in the spring I can eat them again. This has happened a few years now so I believe that it is real. I don't think this is a problem for any but the most sensitive. I don't think that available testing methods are sensitive enough to prove this level of contamination so it is really just speculation. Some celiacs also have other food intolerances.

How sensitive are you? Do you think that you have reacted to meat or eggs? It really seems that low levels that bother some are safe for others. If they don't bother you, you are probably in that group. The majority of celiacs don't have problems with meat or eggs.
