    Wacky Cake question

    Wacky cake is the cake you mix and bake in the pan, also known as 1-2-3-4 cake or One pan cake. Only registered and activated users can see links., Click Here To Register... one of the recipes I found. My question, is can it be made gluten free? It's a fun, simple, delicious cake, and I would like to see if it can be GF, as well. Thanks all. P.S. I'm not sure I've been on these boards long enough or have enough posts to post a link. If not, I'm sorry, and please delete it.

    Just substitute with gluten free flour...I'd use a gf flour blend (rice,tapioca,potato starch blend or one of the gf all purpose flours) and maybe 1 tsp guar gum or xanthan gum. Try it and let us know. I think it should convert well. With all that oil, you may not need the xanthan gum. I might try this but probably not until after Thanksgiving.

        This is the wacky cake recipe we use Only registered and activated users can see links., Click Here To Register... I just use my gluten free flour blend and add 1 tsp xanthan gum. I used to make it in the pan but found it works well if you use a mixer (although it might not rise as much). The recipe I use makes great cupcakes. It is our standard recipe for any family birthday celebration.
