I stumbled onto this a while back and I've been enjoying this ever since.
I'm making "microwaved" crackers out of a number of things: lupin flour, cashew meal, coconut flour, almond meal, and flax meal. Usually a combination of two. Both flax and lupin make the crackers more sturdy.
Anyway, you mix together the 2-3 Tbl total flours or meals, add some salt, seasonings and enough water to make a paste.
Then spread it out on a silicon baking mat (I had to cut mine in half to fit into the micro).
Microwave for about an initial minute. After that, you want to microwave more in about 30 sec increments until it is crispy. Be careful because you can burn it. I found that almond meal and coconut flour both burn easily.
Some spices I use are:
Cajun:
Cayenne (carefully!)
Garlic powder
Onion powder
S&P
Dried Oregano
I don't measure anything, but you only need just a tiny shake of cayenne pepper. Be generous with the salt, otherwise your cracker will taste like cardboard. :)
