    Chia Seeds

    I recently went to a dinner party and my friend's daughter who is mostly paleo helped prepare the meal. I was told what I could eat and that there was even dessert for me. She had made a pumpkin, almond milk, chia "pudding" that she had baked. I am always a bit nervous eating food others have prepared but felt I had to try this dessert. The dessert was very good and I am thinking of recreating it with coconut milk.

    Does anyone else ever eat chia seeds in some form? I have read mixed things about them. I have been feeling really good since I cut most grains out of my diet. I do eat tree nuts and pumpkin seeds. I can't decide if chia seeds count as a grain or if eating them in moderation would be ok. I suppose I may go ahead and try but wanted to hear from others about experiences with chia seeds.

    hey judy!

    i can't answer the questions about chia seeds related to a gluten free diet.

    but, i can recommend their good qualities as a seed. they are a good source of protein, calcium and omega-3 fatty acids.

    this is my favorite recipe for a summer breakfast. i make the whole recipe and divide it up into 8 oz. glass jars that i saved from jam. it fills about 4 of the jars. the only changes i make to this recipe are cutting down the maple syrup or agave nectar to one tablespoon and then using stevia to taste. that cuts down on calories. i also add about 1/4 teaspoon of sea salt, otherwise it's kind of blah. this is a cold pudding that doesn't need cooking.

    you could experiment with different fruits and spices. i like the taste of cardamon and the hint of maple syrup in this recipe.

      Judy, I eat Chia Seeds most days, 2 T in a cup of water and let it sit until it thickens, and then I eat it with a spoon. Not much taste. I do this for the fiber.
