    Easter Dinner?

    I just now thought about Easter Dinner.... Yikes. I have no plans at all. I will be at church -- well, in my car parked in front of the church and the pastor will be speaking to all of us.

    What are you planning for Easter dinner?

    Hi Jingle. We are cooking for Peter’s mother and delivering the meal. The menu is salmon, baby Yukon potatoes with butter, steamed green beans and boiled carrots.

      I can't think of a thing … I have a nice ham slice and some chicken breasts in the freezer and I could do several things with the chicken. The ham would be OK with some potatoes and a canned veggie.
      Our Sunday weather does not sound good so I won't plan on BBQ.
      I always enjoy a breakfast type meal -- a nice omelette sounds good.
      I'll keep thinking.

        This morning I decided what I would have for Easter Dinner … one of my very favorite dishes. So I got dressed, drove to Walmart. put on a mask, gloves and shopped for fresh things.

        BROCCOLI SALAD

        Broccoli pieces
        Cauliflower pieces
        Grapes (red are best)
        Lots of small fried bacon pieces
        Almond slices
        Chopped onion - green or any kind you want
        Raisins - if you want.... I never use

        1 cup mayo
        1/4 cup sugar
        1/4 cup milk (I always skip for thicker dressing)
        1 Tablespoon regular vinegar
