I cook a lot

I don't have a lot of things to do or places to go …….. so I cook. If I had more room in my freezer I'd bake more cookies ~sigh~.

For breakfast I had the last of the left-over chicken corn chowder. Lunch was the last of the broccoli salad. Most of the day I had a big pot of potato soup cooking and that made dinner.

Cooking, for some people, can be very therapeutic. It used to be so for me. When I was young, even with my children and busy life, I used to make sourdough bread from an old "starter." I loved to bake and make meals for parties. Now, I don't cook at all.

Your recipes and meals are all delicious and nutritious. I'm sorry I have not posted to your other threads, but I have read them. I am living vicariously through you now as you cook.

I can almost catch the wafting aroma of your creations in my imagination.

Keep cooking! It's good for you for lots of reasons!

Today I had the stuff to try another new-to-me recipe. I didn't have the penne pasta so I used the mini farfalle setting in my cupboard.
It's not great but it is pretty good.

It’s Bon Apetit chefs making sandwiches from things in the kitchens. Some are pretty complicated but it’s fun to see their kitchens and the chefs are funny. I made the first sandwich for my husband today. Tasty.

A couple weeks ago I was looking in the food display at a small, local grocery with an incredibly good deli. They had some odd looking dish made from sliced polish sausage (?), green pepper, potatoes and onions. I bought the smallest container available - gobbled it at home - went back to the store and bought the largest dish. Wow, that stuff was good.
A few days ago I went to the deli to ask when they would have it again and was sorry to hear that they had it yesterday. When I said I was disappointed the great woman working the deli, said I should just make it myself -- it was just exactly what it looked like, no spices, nothing fancy, just brats (or Polish sausage), chopped potatoes, lots of onion and lots and lots of peppers - green, yellow and red, salt and pepper to taste.
So I bought what I needed and made it at home ..... wow!! It is so-o-o-o delicious. I am amazed that something so delicious, so good looking is that fast and easy to make.

Tonight I used a new recipe to make one of my favorite foods --- Sweet and Sour Pork. The recipe was complicated, $$$, took lots of time and was HORRIBLE. I ate a few bites and gave up. It's a large pan of stuff and I planned on taking some to my next-door-neighbor, but I'm not ... the whole mess goes in the garbage.

It's me --- talking about food again. Today I had the very best lunch possible and got to wondering what anybody else had. I don't expect anyone to answer but ...........

I had a really wonderful bacon and tomato on toast sandwich - my favorite food in the world IF the tomato is fresh and home-grown. And for dessert I had a root beer float.
What a meal! I am so fortunate.

I agree about the tomato, Jingle, and the bacon has to be “real” not microwave, thick and crisp. The best bacon I ever had was at a retreat in a New England ski country hotel. They cooked it in the oven. Mmmm.

Yesterday, I made an omelet for lunch. I sautéed diced onion in a cast iron skillet and added fresh oregano and two cut up sun dried tomatoes. After I cracked in the egg, I added feta and salt and pepper. The best.

I've enjoyed that polish sausage, peppers and potatoes so much I've made it again. Now I'm trying to think of something for dinner tonight ..... Will it be that polish sausage concoction again or shall I make some potato soup?

I can attest to that. Whenever I feel that my anxiety would start, I go to the kitchen and cook. And I feel calm. It is really therapeutic. I really enjoy cooking,besides I am learning from it.

I enjoyed cooking before but now it seems like a burden ;(...I am missing those days when I feel energetic doing it....
