    OT: easy shrimp (or crab) dip

    Somebody asked for this recipe in another thread. I thought it might get lost there, so here it is. One pound of cooked shrimp, chopped fine. One small onion, chopped fine. One-half teaspoon garlic powder (more or less to taste), one-half teaspoon coriander, one teaspoon sugar (dont omit the sugar; it really enhances the taste of the shrimp), a dash of salt, two 8 0z packs of cream cheese, softened, one half cup sour cream.

    I use my food processor to chop the shrimp and onion. Just be careful not to overprocess the shrimp. Stir in the rest of the ingredients. Let chill overnight.

    Put the wonton wrappers in a minicupcake tin. Spray lightly with PAM. Bake in 400 degree oven for about 6 minutes, or until brown and crispy. Let cool completely before filling.

    Or lay wonton wrappers on a lightly oiled baking sheet and bake in 400 degree oven until brown, about 6 minutes. Cool, and use as crackers.

    Or just use crackers.

    Or lay out wonton wraps, place 1 tsp. of dip into center of each wrapper, fold into a triangle, pressing out any air. Drop into hot oil and cook until brown. Remove and drain well on paper towels.

    Or lay out wonton wraps, fill as described above, lay on lightly oiled baking sheet, place in 400 degree oven and bake for 6-8 minutes, or until lightly brown.

    I generally make the little "cups"...adds flare, easy to pick up and eat.

          That's my Shrimp Butter!!!!! Except mine has butter in it.....yummmmmmm!

            Where is this wonton wrap stuff found...frozen pastry section maybe?

              I just looked at our local market website and it looks like they may be in the produce section.

                Yeah, in the produce section....dont ask me why! In my store they are in the section wheere you will find packaged sliced mushrooms, or cut up fruit, or prepared vegetable trays. Definitely not frozen!

                Dint know about shrimp butter? What...puree with butter and use as a spread??

                    Yeah sorta, not all the way pureed (minced would be a better word), and all
                    ingredients are added to a 1/4 lb of melted butter, add 8oz philly crm cheese,
                    whip and chill.....bigger crowd dbl it!! Crackers or your wontons would
                    probably work.

                      And of course no calories at all. Nor cholesterol... pound of butter??

                      I think for mine you could thin it a bit with milk to make it a bit mor dippable. Not a word, but you get the meaning.. yours sounds yummy, if rich..

                        I've never made this but a recipe for shrimp butter that I found on a recipes Website involves 3/4 cup of softened butter plus 8 oz. cream cheese and 1/4 c. mayo. It's whipped together using an electric mixer. Two 4-oz. cans of shrimp drained, 3 Tbsp. lemon juice, a tablespoon of chopped onion, 1/2 tsp. garlic salt. Apparently you chill it for a few hours after mixing it up, then let it come to room temperature to serve.

                          That's it Joan, except I hate the canned shrimp, so I use
                          freshly cooked shrimp and mince it....much tastier!!!

                            Ah, a stick of butter. Thats what you had in the original recipe you posted, and I skipped over that. That makes more sense. I will have to try that next time. Yes,the canned shrimp is not good. Fresh shrimp is easy to cook, and if you dont want to do that, its often available already cooked. Frozen shrimp is ok, too, only youd have to thaw it first.

                              I'm in complete agreement--canned shrimp isn't at all the same as fresh or frozen shrimp!
