For me, only me, being a vegetarian is the most serious philosophy in my life. Every day, throughout every day, I am forced to think/remember how I am living in this world. Symbolic but the touchstone for reminding me how I want to live on this earth. I grew up eating meat and enjoy the smell of tuna fish salad, pot roast and many foods. It may be important to me that I remember enjoying these foods.
That of course forces decisions and actions that support those ways. I can not just sit back and ignore my beliefs.
I suppose people use religion to guide them but being a vegetarian invades each day and makes me think about life and my obligations to it. And that leads to decisions at every turn. For example, I am an organic farmer. I study how public decisions are made and speak up on public debate. And on and on.
I wish everyone thought about this earth we live on and how they are interacting with it.

Thanks for sharing, Linda. No, I didn't see the PBS show last night, but I've set my DVR for next week and will see if I can catch last night's episode online.
When I watched the program on the "intelligence" of plants and the familial behavior of trees a while ago, I wondered about how we grow, harvest and consume our vegetable produce and grains too. I believe there's something to Native customs of honoring what you take from the land.
I stopped eating beef for ethical reasons, and I don't think I could prepare it now...I'm surprised you have no problem cooking up animal-based meals for your DH, I'm not sure I could participate in animal-based meal prep if I stop eating it all myself...although maybe it would be easier as my diet decision would be based primarily on health reasons.
