    TOday I swam 1/2 mile. Yesterday I chopped up 2 cups of onions, and chopped up 3 cooked chicken breasts today. I set all of the necessities in the cooking area.
    Today after th swim, I made Senegalese Chicken Peanut soup. It is like WOW in flavor. It is much easier than it seems. If you prepare it right, it works, but I haven’t been doing well, so its hard. My Housekeeper is a love: She cleanups up after I cook, I made enough for today, Wednesday (IVIG day) and Thursday. Thankfully.

    I can barely walk at all without severe pain, and risk of spasms.

        Unable to swim today due to medical. Worked on walking. ...which is very poor
        I walked 5 minutes on 3 occasions. There were starts and stops here and there as I made a big salad for tonight.
        There might be more walking soon, as the end of the day Is the best part for the legs.

                Today I swam 1/2 mile. Then, I made a delicious casserole where I sautéed chopped up fennel, then added garlic for a minute, then added small amt of white wine vinegar to sizzle, then a can of diced tomato with juices. Set aside and put in a casserole dish. Then I added large raw shrimp, about 25 of them atop of it.
                Then, I made a breadcrumb mixture with feta cheese, chopped parsley and EVOO. ANd I sprinkled it over the shrimp mixture and baked it 15 minutes.

                My housekeeper helped clean up.
                A simple salad with boston Bibb lettuce with crushed salted pistachios on it, and think crescent slices of apple on it rubbed lightly with cinnamon. Tossed with oil and vinegar with a dash of mustard so they don’t separate. ....
                I might add avocado at dinner time as it might not be quite enough food for DH with out it, since it has to stretch for three evenings. Now I wont have to cook Tues or Wed except a very simple veg side dish. Very simple.
                REsing the rest of the day. ....Maybe read a bit after noon nap, The Invention of Wings by Sue Monk Kidd. So far, it’s an excellent book. Its nice to be able to read again, not as much as befor, but that’s okay...

                  I have that book Sunshine and I remember enjoying it very much.

                  Great meal. What time do you want Ann and me to show up? She can stop in N.C. and pick me up. Seriously, you are doing some great cooking. Do you have a new recipe book?

                      I swam 1/2 mile today and enjoyed encouraging a frog to leave the pool and live in the pool house or outside.

                      I then made roasted broccoli for the side today. I had a bag of frozen florets for hurricanes. I read on line you could roast frozen ones as opposed to fresh. They looked good. I will taste some later to see. If nothing else, they wont be bad, just average.

                      THen I did my oil organizers. Then rested. Getting ready for telemedicine call Then will take my mid day nap. I have nothing I have to d the rest of the day so far, so I think I will do nothing and rest up for tomorrow’s testing, get my papers ready.

                            In a half hour, I will turn off the phone, and lie down, sleep usually comes even if only 5 minutes, but even if not, lying down for 45 minutes to 90 minutes becomes crucial . Cannot function well without it.
