I never thought to use tomato soup as sauce base.

Will try that. I usually don't have spaghetti sauce or anything like that, so this will be an easy substitute. Thanks!

Virginia, bet your recipe would be great with a fish instead, like sole, for example. Just add it a bit later in process so it's not overcooked.

Oh, Howie, I'd never heard of a mouli grater before now either.

The things I learn here! I's gettin so smart!

:) At Christmas and Thanksgiving we have sweet potato casserole.

Number of Sweet Potatoes as people
1 small can of crushed pineapple
2 small packets of pecan pieces
Minature marshmallows on top last few minutes until slightly brown

I bake the sweet potatoes then add the pineapple and nuts to the skinned sweet potatoes and bake until thoroughly warm. Sprinkle the top of the casserole with the marshmallows and turn on the broiler for a few minutes to melt them and turn them slightly brown.

        Jeanie :)

I ate my first yucca 2 weeks ago and am game to try more.
It's a starch that should lend itself easily to many tastes.

Pass the buttered cuban bread, yellow rice, garlic shrimp and a Dos XXs!!!
          Don't forget the beans.

Been thinking about sweet potato waffles with pecan pieces.
It must taste good and the over run could be frozen!

Just like a baked potato? Haven't tried them that way.

Do you eat them just like a potato? With the same stuff on them like butter etc? Or brown sugar?

Is there a noticeable taste difference between Yams and sweet potatoes? For as many standard "potatoes" grown in Idaho there are surprisingly few growers planting them. I wonder why?

To me Yams and sweet potatoes (orange) taste the same. Yes, you can eat them just like a baked potato with butter, sour cream etc but I find they are great plain. Eaten with the skins they are richer in potassium (about 400mg for a medium vs 200) than the fries or skinless. Many of the heirloom potatoes now being grown (purples and yellows especially) are much sweeter than the standard russet or white cooking potato

I like to peel sweet potatoes, pour a bit of melted butter over them, then a sprinkling of cumin. Stir well, spread out in the pan and bake. Yummy! I really hate the sweet potatoes with marshmallows on top dish that pops up all the time. I avoided sweet potatoes for years because of those...then someone served them plain, baked, like "regular" potatoes, and I fell in love. To me, sweet potatoes are sweeter than yams, but otherwise the taste is very similar.

You can mash sweet potatoes, too, just like regular potatoes -- milk or cream, butter, sour cream if you like that...salt, pepper...

speaking of potatoes, I don't like the popular Yukon Gold potatoes, either, They taste really "waxy" to me. Most unpleasant after taste. Some of the more unusual (and hard to find) blue potatoes are interesting..taste like your ordinary potato..just a strange color!

                              Those sweet potatoes sound good!

I just put some purple carrots on my shopping list. I have no idea if they taste different but they look cool. Purple is my favorite color.

I had never heard of purple carrots. Will have to look for them

Cat, do you cook the sweet potato any before you put the butter and cumin in and before you bake it.

I eat sweet potatoes most anyway they are fixed. I use to boil them, then mash and then I put butter, orange juice, lemon peel and bake for awhile. I can't remember the exact recipe, but I still have it. They are good like that also.
