Thanks for the link Vicky! Did some exploring and found some interesting uses, info, and recipes about sweet potatoes and sweet potato greens. I didn't know the greens can be used just like spinach! Yes, vodka is made from potatoes and at least this farm makes vodka, gin, liqueur, and a blended whiskey from sweet potatoes!

Found a recipe for crock pot sweet potato oatmeal I'd like to try. Here it is in case anyone is interested in giving it a try.
Slow Cooker Sweet Potato Oatmeal
Sweet potatoes show up in breakfast goods like pancakes and waffles all the time. While those morning pastries taste great, they’re usually full of butter and doused with maple syrup, making for a pretty high-calorie meal. Get all the sweet flavor you love in a healthier package with this slow cooker oatmeal from Skinny Ms. With just a hint of sweetness and some warming spices, it tastes remarkably like pumpkin pie while giving you plenty of fiber, vitamins, and a bit of protein from the milk.
This low-maintenance recipe is simple, but it takes some time. We suggest making a full batch on the weekend. You can store it in the fridge, and reheat leftovers for quick breakfasts all week.
Ingredients:
1 cup steel-cut oats
2 cups low-fat milk
2 cups water
1 cup grated sweet potato
2 tablespoons sweetener of choice, like maple syrup or honey
Pinch kosher salt
½ teaspoon cinnamon
1 teaspoon pumpkin pie spice
Optional toppings
Raisins
Chopped nuts
Directions: Combine all ingredients in a slow cooker. Cover, and cook on low 2 to 2½ hours, or until thickened to desired consistency. Top with nuts or raisins, if desired.

Anyone ever have Sweet Potato Pie? My Granny used to make it. It looked like pumpkin pie, but tasted a little sweeter. You know, it's hard to type when you are drooling on the keyboard!

I was thinking with pre-made pie crusts and pastry toppings, cans of sliced mushrooms, pre-shredded cheese (I'd ignore the eggs, I dislike them, but I could buy a carton of pasteurized eggs, shake it, to brush on the top), and bags of pre-shredded, washed cabbage, it would actually be fairly easy to make. I'll let you know.
It looks like I could freeze portions for later too, it could last quite a while.

:) I hate cooking and do the easiest thing I can. Microwave or one pan dish. When David was cooking he always put too much food on my plate and was offended if I did not eat it all. In the 3 years since he died I have lost 17 lbs without dieting, but just not over eating. Also my meals are not as tasty as his were. Jeanie :)

Salmon pie:
One 13-1/2 oz (or larger) can of salmon
2 eggs
1/4 cup milk
1 small onion, chopped
1 rib celery, chopped
2 tablespoons butter, melted
1 tsp. Seasoning: either dill, or cilantro, or basil, or Italian mix, or oregano...Or whatever you like
1/4 tsp salt, a good shake of pepper
1 pie crust : if you buy Pillsbury crusts -- the kind you open and unroll the dough, you can either lay one of the crusts in a pie plate and make this like a quiche, or put the crust on top of everything and make it like a pie. Or if you're used the already in the pie plate frozen pie crust, then your only choice is a quiche....
Open salmon, drain off any water, remove bones and skin. Easier yet, buy the salmon in packets, near where the tuna is sold on the shelf, in packets. It's more expensive but way more convenient. Or if you buy raw salmon fillets -- they're pretty cheap these days -- buy enough to cook for one meal and make this with leftovers. You'll need about a pound, or roughly two cups.
Break up the chunks of salmon into a bowl. Stir in all the other ingredients, making sure all is blended. If you're making a quiche, dump contents into the crust (which you've either already laid into the pie plate, or is there because you've bought the frozen kind).
Or, butter or grease the pie plate, pour in the contents of the bowl, level off. Put the pie crust on top. Crimp edges, cut off any excess. Cut a few holes in the center of the crust to allow steam to escape.
If you want a shiny crust, you can brush the top with water, or with a beaten egg, or a little milk. Or not.
Put pie into oven, preheated to 350 degrees. Bake for 30 minute, or until crust is golden brown. Let cool for 5 minutes before serving, to allow filling to firm up.
Once upon a time the cans of salmon were full pounds. Now they cheat and only give you 13-1/2 ounces, so this makes a small pie. If I'm using the canned salmon, I generally add a can of tuna, drained ( with four cats, we always have canned tuna!). Or leftover chicken, shredded. Or I'll cook fillets the night before,making extra to use in the pie.
This will freeze well, either as the cooked pie, or if you're making extra salmon, the leftover salmon can be frozen and used later.
