          David's Mom used to do lamb on Easter and I never developed a taste for it. Had Mutton on a visit to England and really did not like that. Had goat in India and it was OK.

          My grandfather loved Limburger cheese and Liverwurst sandwiches. Ugh!

            I think this is what my mother tried to feed me when I was so stopped up I couldn't smell it. Of course she was laughing the whole time!

                When my wife was pregnant with our daughter she craved sardines in mustard sauce, saltines and Limburger cheese. I love liverwurst (Braunschweiger) as I am the only one who will eat it we never buy it. It usually goes to waste.

                I do like liver and onions but my favorite is chicken livers, gizzards and hearts. It makes everyone sick just smelling them in the frying pan. We used to have a joke that when ever my wife was going to Boise to visit her mom she would buy a container of chicken livers and they would be in the fridge so I could fix them when she was not home. I know half of you are gagging right now! My daughter used to eat them but as she went over to the dark side (vegetarian) I am all on my own. Son wont eat them, heck he wont even eat fish!

                  And, who knows...she may be healthier as a result. At least my eldest daughter would argue so. Just not ready to leave my steaks. I buy sirloin tips in the family pack and parcel them up to do tips in mushroom gravy or kabobs or small (nutritional portions...not restaurant portions) meals. Also have found that by buying the boneless skinless chicken breasts of the store Organic brand that I can get many more meals out of them by splitting the thickness in half. They cook quickly and are a delicious serving of protein. David's two favorite ways of prep: 1. Melt coconut oil in a skillet, place split chicken breast in hot oil and add black pepper and parmesan. Brown, flip and add black pepper and parmesan. Brown and flip for one more minute to brown cheese on first side. And 2. marinate in olive oil and balsamic vinegar (and juice from minced garlic) and grill at medium flame for about 8 minutes/side.

                    I really like tofu and it's a great source of protein. A surprising number of legumes and grains are pretty good protein sources too.

                    Back in my meat-eating days I loved chopped liver and liverwurst and chicken hearts and livers. I often gave the poultry giblets to the resident cat after boiling them because whoever that cat was, she was right out there in the kitchen waiting for them.

                    Chopped chicken liver is a great delicacy, IMO, if done right--mixed with minced onion and minced hard-boiled egg and seasonings, for instance.

                      Agate, I used to eat lots of tofu. I would take half a block, and put it in the blender with soymilk and Ovaltine. I tasted close to a chocolate milkshake, but was 100 times better for you.

                      Also added an egg or cottage cheese or half a banana sometimes.

                        They may not be so healthy this way but I've eaten breaded, fried chicken livers before. They were okay. I only had them the one time though.

                          I like to watch Bizzare Foods with Andrew Zimmern. Accordint to my kids you have to be able to stand throwing up every 30 seconds if you watch it. There isnt much I would not at least try, besides raw tomatoes and cooked aspergas that is.

                          Breaded fried chicken livers mmmmm I am getting hungry. I have a pork sirloin roast in the smoker right now. Only 2 of us for dinner and as my wife still shops as thought there were 40 of us we will have a big roast for dinner so if anyone wants to come over just show up by 6 and we will feed you. One of my wife's greatest pleasures is if one of the kids (or grandkids) shows up at dinner and she needs to increase dinner size. Anyone who leaves here hungry....well its their own fault.

                              Braunschweiger and liver sausage are different -- the Braunschweiger generally uses smoked pork liver, and sometimes other organ meats like gizzards, the liver sausage can use unsmoked pork liver, but can also use chicken or other critter livers, but only the livers. I like either, on rye bread, with a good beer mustard.

                                We used the name interchangeably. We never use the German name when our friends were around, wouldn't want them to think we were a bunch of foreigners. We never had anything smoked (it cost more) and depending on the time of the year it could have more beef than pork. Of course if it was late fall then there was going to be more pig than beef.

                                But at least I don't have to clean casings anymore, I hated that, now I buy cleaned casings and rinse them in bleach. To add to the lazy factor I have an attachment that hooks to the Kitchen-aide mixer one for grinding and one for stuffing. Last year I built a Trager pellet smoker. I am looking forward to sausage making time, I used to have an old fridge dug in the hill by the old ensilage pit you had to chop the wood, attend to it for a couple of days..... now I just put pellets in the hopper set the temp and away we go. It is really good for a tuff cheap cut of meat (we have LOTS of those) a few hours in the ole smoker and it is out of this world. I made a few brats last year and they turned out pretty good.

                                Howie go ahead and leave now call when you hit Salt Lake City and I will turn on all the barn yard lights on.
