OT Lazy Cooking with Cat!

    The Banquet pot pies are what we had when growing up: turkey, chicken, beef. And they had both top and bottom crusts.

      Yes they do, I just had one for lunch yesterday, a chicken pot pie. 5-1/2 minutes in the microwave. Crispy crust on top, bottom crust.

        It looks as if both Swanson and Banquet pot pies are still around, and both have bottom crusts.

        Sometimes those bottom crusts came out all soggy though....

        I agree that if you're buying something called chicken or beef pot pie, you do appreciate more than one piece of chicken or beef in it.

        A product I buy aspires to resemble meat, I guess--Amy's Meatless Italian Sausage, Mushroom and Olive Pizza. That's the name as it appears in big letter on the box.

          Help, please. MIL is coming for Mother's Day. Peter is a vegetarian, tho' he eats salmon. So, an almost vegetarian.

          We usually have salmon and lots of veggies, a potato dish, salad and dessert. This time, since we just did this at Easter, I'd like to do something w skinless chicken breasts for her and me. I bought the chicken tonight.

          Now, how do I jazz it up? I vaguely remember something w orange marmalade but am open to anything.

            Quite a few of those products are showing up. They are a welcome addition for the increasing number of vegans and vegetarians.

              Sounds as if you're looking for an easy chicken breast recipe because you need to make two different meals for one occasion?

              I haven't tried this recipe but it looks as if it might be good:

              The recipe calls for chicken thighs but since the meat is cubed, there's no reason why chicken breasts can't be used, IMO. At least one person reviewing the recipe made that change successfully.

                Thanks, Agate. I checked in here the first thing this morning and there were no recipes. I thought of Vicky and all the ideas she would have.

                  Too late I know but...an easy and elegant thing to do is to put the chicken breast in parchment paper...top with strips of red or yellow peppers and maybe an asparagus spear or two...and some fresh herbs....make a package of the parchment paper and bake. When done open the package at the table...each person gets their own..
                  Open carefully with a scissors and let steam escape. Wonderful. Takes very little time...

                    I got a break, MIL specifically asked for salmon and then insisted on giving us money to buy the salmon! So, we are having salmon. Later on in the week I'll make the chicken and take some leftovers to her.

                    I do want to make both recipes. Both easy.

                      Buy Alessi pre made pesto. Slather it on top of skinless boneless chicken breasts. Cover with sliced tomatoes. Liberally sprinkle with shredded 2% cheddar cheese on top all over the breasts. You can’t see the meat for all of the tomatoes and cheese. Bake 40 minutes in 400F oven.

                      The pesto tomato and cheese create a yummy moist and flavorful chicken with plenty of drippings. I make this every week. So easy....

                          Put plenty of cheese in it, the fine shredded type. It almost creates like a roof on top of the meat and tomatoes and pesto.
