I am making pickled pork hocks today...... just a couple of them as I am the only one that eats them. Hard to find them in the store and pigs feet are mostly gristle and bone, seems like a waste of money.
I know most everyone is turning up their nose but I have been craving them and today was payday so Trish picked up a package for me.

Well, I just happened to have saved that page for easy reference...Originally posted by Jeanie Z View Post:) I missed Ann's recipe for fudge somehow. Where do I find it? Thanks, Jeanie :)

In a microwave-safe bowl, stir together the chocolate chips and the sweetened condensed milk. Microwave for 3 minutes, on high. Remove from microwave. The chips will look like they're not melted. Trust me, they are! Stir the chips and milk together with a heavy spoon, until fully incorporated and mixture is smooth. Stir in vanilla, then the nuts if you want them.
Pour mixture into pan, spreading to even thickness. Chill at least 2 hours, until firm. Pull out of pan and peel off foil before cutting into pieces.
That's all! Fool-proof, one bowl. And if you've covered the pan with foil, you won't even need to wash it! :)

My mother used to make these when I was a kid but she didn't pickle them. Must be a German thing, huh?Originally posted by Gary View PostI am making pickled pork hocks today...... just a couple of them as I am the only one that eats them. I get what you're talking about when it comes to autoimmune diseases, Gary. My younger sister had type 1 diabetes, my mom has rheumatoid arthritis, and I was dx with MS. 12 years after I was DX with MS, my mom was dx with it, too. It's like we can't win for losing.Originally posted by Gary View PostBeing that both my kids are type I diabetics since the we young (son was 2 1/2 and daughter was Dx on her 9th birthday) we have learned to read labels and eat stuff without sugar. Thats was before fast acting insulin now it doesn't matter. The big problem with sugar substitutes was you couldn't cook with them, what ever you cooked with it became bitter. Now they have Stevia and it doesn't change when you bake with it. Except for your pocketbook it cost WAY more than sugar.
We love immune diseases (type I diabetes, Multiple Sclerosis and thyroid problems) in our house. I have always said that cheap vacation we took to Chernobyl wasn't such a
bargain after all.Jendie

Yeah, being a fat German kid we use vinegar on just about everything. I was married before I found out that some people don't use it on Coleslaw. We use regular hocks in beans. Our version of pork and beans. Along with some corn bread.....mmmmmm.Originally posted by Frog42 View PostMy mother used to make these when I was a kid but she didn't pickle them. Jendie, It really does make you wonder about genetics and ANY autoimmune disease. Or maybe the luck of the draw is gonna slap some people around more than others. Like the MS drug ads that have all the happy people flitting around in the sunshine not letting MS get THEM down.Last edited by Gary; 04-13-2016, 11:56 AM.

In Cat's absence, foodies can while away the time for a few minutes by taking this quiz to see how well you know foods from various parts of the world. (I got 8 out of 10 right.)
