    Cherie that does sound really good. Did you fry it on top of the stove or put it in the oven?

      If any of you want to make a large gelatin dish I've got a good one. Don't let the list of ingredients fool you. When it comes right down to it, it is not that many and it is quick and easy.

      ORANGE SALAD

      2 Large boxes orange gelatin
      4 cups hot water
      1 large can crushed pineapple w/juice
      1 can mandarin oranges w/juice
      1 3 oz pkg lemon instant pudding mix
      1 cup milk
      1 large container non-dairy whipped topping

      Dissolve orange gelatin in boiling water. Add crushed pineapple & juice.
      Cut mandarin oranges in two and add to gelatin mixture along with juice.
      Refrigerate until set.

      Dissolve lemon pudding mix in milk. Fold in whipped topping and spread
      on top of salad. Refrigerate until set and serve.

      This makes an 11x13 dish. It is really good to serve for company, and then have some left over for later. I am going to make it later this month when my book club comes over. I got my recipes out and saw this one and felt it was one the ladies would enjoy. I will make a couple of other things and will furnish drinks. They will all bring just a little something to finish it out.

        Stove top in about a tablespoon of melted coconut oil. Coconut oil BTW is a misnomer. It is solid like shortening but harder. And it is saturated fat. I always thought saturated fats were animal fats and unsaturated from vegetable. Clearly, I am not the expert here.

          You need to know that ONLY canned pineapple will work in this. With fresh, the Gelatin does not set and remains liquid.

            Coconut? Hmmm sounds good I am going to suggest it to Trish.

            Cream of wheat with butter? Hmmm Sounds good too/

            The packages of instant oatmeal ARE good they have a variety that several different flavors, we get them quite often.

            Went out to the garden area yesterday and noticed the the rhubarb is growing like crazy it had some flower shoots coming off several places. It is gonna be a huge harvest and soon!!! I cant wait Rhubarb pie, Rhubarb cobbler, Rhubarb tarts Rhubarb sosse (sauce) mmmm did I mention I like rhubarb?

              See, there's another thing I've never had, rhubarb. I feel.....neglected? Deprived? Come here Seven, daddy needs a hug............

              OH, and I became a grand uncle, or a great uncle tonight! My back hurts!

                Congrats, Howie!

                Ever since I discovered that gelatin is beef-derived, that's off my food list.

                Gotta have a LOT of sugar to offset the tartness of rhubarb, Gary. It sure is a hardy plant(?) though.

                Cherie, coconut oil is one of the few saturated fats that is good for us. Great on the skin too, just melt a bit in a closed container under hot water, and smooth the oil on your face.

                Your chicken sounded great, glad it worked out.

                I keep packages of the instant oatmeal too. The berry ones are high in fibre too. Oatmeal is good for lowering cholesterol.

                  Neither coconut nor rhubarb are my favs. Coconut too crunchy n rhubarb too bitter.

                    My rhubarb leaves are about 8-10" across right now but another 1-3 inches of snow is due this weekend so it may further stunt it.

                    Tonight's dinner was leftover ham from Easter dinner reprised, green beans (frozen) and baked sweet potato.

                        Never had rhubarb? Oh my.

                        There's a really good strawberry rhubarb compote I recall. It seems to go well with strawberries. Rhubarb pie is truly great when done right. But yes, recipes with rhubarb always do involve a lot of sugar.

                            I thought I'd heard of ways rhubarb is eaten without adding sugar, and I found some recipes:

                              Old family recipe for "Raw fries"

                              Three medium potatoes thin sliced
                              1 medium onion chopped
                              tablespoon oil in hot skillet
                              Salt and pepper to taste.

                              Fry potato and onion till brown, turn and cook till brown again. (approx 7 minutes on each side)
                              serve and enjoy. Reheats beautifully as a breakfast add on with eggs

                                Rhubarb cooked as noted above and added to a cup of raw cranberries and heated for 1-2 minutes makes a wonderful side dish or toast topper or waffle or pancake topping.
